Spicy Chicken Casserole with Green Beans



Ingredients / 2 port

300 g chicken bites, basic recipe

300 green beans, frozen

5 dl chicken broth

2 tbsp ghee

1 onion, finely chopped

2 garlic cloves, minced

2 sardines, chopped



tbsp tomato paste

2 chilli peppers, sliced

1 red bell pepper, chopped

2 tbsp fresh dill, chopped

1/2 lemon juice

60 g cottage cheese to serve

Celtic salt and freshly ground pepper

Method
  • Boil the green beans for 5 minutes, sieve and place them into a bowl with iced water to cool.

  • In a large pot, add the ghee and gently heat the sardines and garlic under medium heat for a few minutes.

  • Add the tomato paste, chilli and bell pepper and continue for a few more minutes.

  • Add the chicken, green beans and broth, stir gently and simmer until the mixture thickens.

  • Season the taste with salt and pepper, add the lemon juice and turn off the heat.

  • Serve immediately and garnish with cottage cheese, dill and extra olive oil. Enjoy!


Tips
  • I prefer to cook and separate the beans to control the consistency and the colour.

  • Feta cheese makes it more classic Greek!
