Scramble Eggs with Tomato, Peppers & Goat Cheese

Ingredients / 2 port 2 tbsp olive oil 4 eggs 4 tbsp almonds milk 2 big ripped tomatoes, grated 1 tsp tomato paste 1 tbsp ajwar, spicy | 2 chorizo sausages 1 red bell pepper, thinly sliced 1 yellow bell pepper, thinly sliced 2 tbsp fresh chopped parsley 60 g goat cheese Celtic salt and freshly ground pepper

Method
Use a toothpick and pick some holes around the sausages.
Heat a nonstick pan with one tsp olive oil and 2 tbsp water and then add the sausages in and cover with a lid until the sausages become steam. You can listen to the oil and the fat of the sausages crackling in the pan after the water evaporates. This way, we eliminate the sausage fat as much as possible.
Remove the sausages and clean the pan. Add olive oil to the same pan and gently sauté the peppers for a minute.
Add the tomato paste, ajwar and grated tomatoes and simmer by stirring continuously.
Meanwhile, start to beat the eggs with the almond milk, and when the texture starts to thicken, add the egg mixture to the pan and stir gently to incorporate the ingredients.
Under medium heat, it may take two to three minutes to be ready. Season the taste with salt and pepper, add the parsley and turn off the heat.
Garnish with the cheese and serve at once!
Tips
My mother used to make this breakfast on Saturdays for my father but with a local hand-made sausage. On the other hand, she never discarded the excess fat because that was the authentic taste, she used to say that it was too horrible to think about it because there was all the taste.
It is much better my way. The point is that I avoid using carbs, just protein and fat, and I can eat some nuts with my coffee. Great choice to start your day!
