Navy Beans Casserole with Feta Cheese

Ingredients / 2 port 400 g navy beans in a can rinsed under running water! 2 tbsp extra virgin olive oil + extra for garnish 1 onion, finely chopped 6 garlic cloves, thinly sliced 2 celery stalks, sliced 2 medium carrots, sliced

2 medium, very ripped tomatoes, chopped 1/2 red bell pepper, chopped 1/2 yellow bell pepper, chopped 1 tsp tomato paste 1 tsp oregano 40 g feta cheese Celtic salt and freshly ground pepper

Method

  • Into a large pot under medium heat, add the olive oil and gently sauté the onion, garlic and tomato paste for a minute.

  • Add the rest of the ingredients and cover with water, bring to a boil and directly after, turn the heat to medium and simmer for 10 minutes.

  • Add the beans, stir gently and continue simmering for another 20 minutes.

  • Correct the seasoning with salt and pepper.

Tips

  • To start cooking the beans from the beginning is a long process, and most people don't feel like doing it. On the other hand, buying them ready-cooked is slightly different in the final taste. We should try to make it easier, and in the future, we can see the original recipe.....there is no need for the rush!

  • You can replace the water with good chicken stock or add some chicken meat from the beginning of the process.
