My way...Ratatouille, ground recipe!

Ratatouille is a savoury French vegetable mix that can vary depending on the area and the chef's inspiration. I use the following ingredients in my basic recipe, and I love this combination.
Ingredients / 4 port
4 tbsp extra virgin olive oil
2 medium-sized aubergines, thick chopped
4 small zucchini, roughly chopped
1 red bell pepper, chopped
1 yellow bell pepper, chopped
1 green bell pepper, chopped
1 fennel, thinly wedged
4 shallots, thinly sliced
4 garlic cloves, thinly sliced
400 canned tomatoes
1 tbsp tomato purée
1 tsp thyme
1 tsp oregano
Generous amount of chopped parsley to serve
Celtic salt and freshly ground pepper
Method
Preheat the oven to 160° C oven.
Add all the ingredients to a baking tray and mix with your fingers.
Whisk the tomatoes, tomato purée and olive oil and add it to the vegetable mixture.
Season the taste with salt and pepper and bake for about 40 minutes.
Turn off the oven and leave the mixture to rest for another 10 minutes, then remove the tray from the oven, spread the parsley on top and squeeze the lemon.
Stir gently and serve at once.
Tips
You can serve anything you want, from grilled meat to seared fish.
I like the vegetarian way, just rice or even mashed potatoes.
