French Onion Soup...my way!

Ingredients / 4 port

2 tbsp coconut oil

2 tbsp ghee

12 silver onions, sliced

2 bulbs garlic, ready baked

1 tbsp thyme, dry

2 bay leaves

100 g hard goat cheese, grated

2 tbsp freshly chopped parsley

Celtic salt and freshly ground pepper

Method
  • In a large pot, melt the coconut oil and the ghee and over medium-high heat, place the onions and gently sauté by stirring them occasionally until they get a light brown colour.

  • Add the thyme and gradually pour in the stock and the bay leaves. Increase the heat and boil it, skimming off any foam that rises to the surface.

  • Reduce the heat to medium and simmer gently for another 30 minutes.

  • Season the taste with salt and pepper and turn off the heat.

  • Serve the soup in bowls and spread the cheese and the parsley on top, and enjoy!


Tips
  • A gluten-free bread with gratinated cheese will also be closer to the classic dish.
