French Onion Soup...my way!

Ingredients / 4 port 2 tbsp coconut oil 2 tbsp ghee 12 silver onions, sliced 2 bulbs garlic, ready baked | 1 tbsp thyme, dry 2 bay leaves 100 g hard goat cheese, grated 2 tbsp freshly chopped parsley Celtic salt and freshly ground pepper |
Method
In a large pot, melt the coconut oil and the ghee and over medium-high heat, place the onions and gently sauté by stirring them occasionally until they get a light brown colour.
Add the thyme and gradually pour in the stock and the bay leaves. Increase the heat and boil it, skimming off any foam that rises to the surface.
Reduce the heat to medium and simmer gently for another 30 minutes.
Season the taste with salt and pepper and turn off the heat.
Serve the soup in bowls and spread the cheese and the parsley on top, and enjoy!
Tips
A gluten-free bread with gratinated cheese will also be closer to the classic dish.
