Chili con Carne with Chicken and Vegetables

Ingredients / 2 port 1 small bowl chili con carne, leftover 60 – 80 g chicken, leftover 1 medium bowl of baked vegetables 2 tbsp ajwar, mild 1.5 dl cous – cous, raw | 1 cube dry chicken stock 1 tbsp olive oil 40 g feta cheese 2 tbsp parsley, finely chopped Celtic salt and pepper |
Method
Into a small bowl, place the cous – cous, season it with a little salt and cover it with three dl boiling water. Place a membrane on the bowl to keep the temperature high, so the cous – cous gets ready. It might take 5 – 6 minutes.
Add the chilli con Carne, chicken, vegetables, ajwar and little water into a small pan. Simmer under medium heat until warm enough.
Correct seasoning and use deep plates (pasta plates) to serve the food, adding the cous – cous at the bottom and the chilli mixture on top of it.
Spread the olive oil on each plate and sprinkle the parsley and the feta cheese. Enjoy!
Tips
This is a leftover dish. Every time you cook, it is better to create some extra food because, in this way, through the days, you will save time cooking. That means a better economy and training yourself to enjoy cooking by discovering new dishes and tastes.
