Chicken with Ratatouille & Goat Cheese


Ingredients / 4 port

1 serving of ratatouille, basic recipe

4 chicken filé, basic RFD technique

2 tbsp balsam vinegar

2 tbsp red wine

2 tbsp chives or parsley, chopped

3 tbsp extra virgin olive oil

Celtic salt and freshly ground pepper


Method

  • When the ratatouille is almost ready, heat the pan on medium-high heat with a tbsp of olive oil and gently stir the chicken for a minute on each side.

  • Deglaze the pan with the wine and the vinegar, and add some liquid from the ratatouille. Stir the chicken in the pan gently and turn off the heat.

  • Serve at once,, and drizzle the rest of the olive oil on the plate and the goat cheese.

Tips

  • Ratatouille is a easy dish and can be made in advance in extra portions and be use during the week, with different meat or even fish, why not?
