Chicken with Ratatouille & Goat Cheese

Ingredients / 4 port
1 serving of ratatouille, basic recipe
4 chicken filé, basic RFD technique
2 tbsp balsam vinegar
2 tbsp red wine
2 tbsp chives or parsley, chopped
3 tbsp extra virgin olive oil
Celtic salt and freshly ground pepper
Method
When the ratatouille is almost ready, heat the pan on medium-high heat with a tbsp of olive oil and gently stir the chicken for a minute on each side.
Deglaze the pan with the wine and the vinegar, and add some liquid from the ratatouille. Stir the chicken in the pan gently and turn off the heat.
Serve at once,, and drizzle the rest of the olive oil on the plate and the goat cheese.
Tips
Ratatouille is a easy dish and can be made in advance in extra portions and be use during the week, with different meat or even fish, why not?
