Chicken & Leak Pie

Ingredients / 6 port 2 tbsp extra virgin olive oil 2 medium leaks, washed, trimmed and very thickly sliced 1 onion, finely chopped 4 garlic cloves, minced 2 chicken filé, ready - cooked & finely chopped | 1 dl white wine 200 g yoghurt, preferably Greek 4 eggs, organic 100 g cheddar cheese, grated 100 g feta cheese, crumbled A hand full fresh parsley, chopped Celtic salt & freshly ground pepper |
Method
Into a large pot, heat the oil under medium heat and gently sauté the leeks, onion and garlic for a few minutes.
Add the wine and simmer until glaze and directly add the chicken. Stir gently to coat all the ingredients and continue simmering for two more minutes.
Turn off the heat, add the yoghurt and both kinds of cheese, and stir gently to incorporate all the ingredients.
In a separate bowl, beat the eggs and mix them with the mixture in the pan.
Brush a 22 cm round pie form with little oil and bake in a preheated 160° C oven for about 40 minutes.
Turn off the heat and leave the pie to rest in the oven for another ten minutes.
Serve at once.
Tips
This is a very easy and tasteful dish to make. It doesn't need special skills and a long time to prepare it. Instead of chicken, you can use any leftover meat you have.
Consider it a light dinner and serve it with salad and some extra olive oil with vinegar to balance the dish's rich taste.
