Chicken a la King...my way!

Ingredients / 4 port


12 chicken thighs, bone free

4 tbsp extra virgin olive oil

1 medium carrot, thinly sliced

1 onion, finely chopped

4 garlic cloves, minced

1 celery stalk, sliced

1 leek, the green part very thinly sliced, the white a bit thicker slices

1 red bell pepper, chopped

1 yellow bell pepper, chopped

6 mushrooms, sliced

100 ml white wine

250 ml coconut cream

1 tbsp mustard Dijon

1 tbsp thyme

150 g fresh or frozen green beans, chopped and blanched until al dente

2 bay leaves

2 tbsp soy sauce

Celtic salt and freshly ground pepper



Method
  • Into a large pot, gently sauté the chicken under medium heat for a few minutes.

  • Deglaze the pan with the wine and then the coconut cream, bay leaf, mustard and vegetables, and simmer under medium heat for about 15 minutes.

  • Add little water if the mixture is too thick, and season the taste with salt and pepper.

  • Add the green beans and thyme and continue simmering for another 10 minutes.

  • Αdd the soy sauce and lemon juice and stir gently.

  • Turn off the heat and leave it to rest for another 10 minutes.

  • Serve at once and garnish with little chilli flakes and freshly chopped parsley. Enjoy!

Tips
  • You can follow the Right Food Daily way, which makes it even easier, but here I want to show you an alternative.

  • Pilaf or basmati rice, both them is the best choice!
