Chicken a la King...my way!

Ingredients / 4 port 12 chicken thighs, bone free 4 tbsp extra virgin olive oil 1 medium carrot, thinly sliced 1 onion, finely chopped 4 garlic cloves, minced 1 celery stalk, sliced 1 leek, the green part very thinly sliced, the white a bit thicker slices 1 red bell pepper, chopped | 1 yellow bell pepper, chopped 6 mushrooms, sliced 100 ml white wine 250 ml coconut cream 1 tbsp mustard Dijon 1 tbsp thyme 150 g fresh or frozen green beans, chopped and blanched until al dente 2 bay leaves 2 tbsp soy sauce Celtic salt and freshly ground pepper

Method
Into a large pot, gently sauté the chicken under medium heat for a few minutes.
Deglaze the pan with the wine and then the coconut cream, bay leaf, mustard and vegetables, and simmer under medium heat for about 15 minutes.
Add little water if the mixture is too thick, and season the taste with salt and pepper.
Add the green beans and thyme and continue simmering for another 10 minutes.
Αdd the soy sauce and lemon juice and stir gently.
Turn off the heat and leave it to rest for another 10 minutes.
Serve at once and garnish with little chilli flakes and freshly chopped parsley. Enjoy!
Tips
You can follow the Right Food Daily way, which makes it even easier, but here I want to show you an alternative.
Pilaf or basmati rice, both them is the best choice!
