Cheese Omelette with Spicy Piperade

Ingredients / 2 port 2 tbsp ghee 1 red bell pepper, sliced 1 yellow bell pepper, sliced 1 green bell pepper, sliced 1 chilli pepper, finely chopped 1 tsp cayenne pepper |
4 free-range eggs, lightly beaten with 2 tbsp coconut cream 100 g grated cheese, preferably cheddar 1 tsp garlic powder 1 tsp mixed spices Celtic salt and freshly ground pepper |
Method
Heat a large, nonstick saucepan with ghee and coconut oil and gently sauté the peppers under medium-high heat for a few minutes. Season with salt and pepper and remove them aside on a clean plate.
Return the pan to the heat. Mix the garlic powder with the eggs, add half to the hot pan, and leave them to harden the bottom for a while.
Place the half cheese and the half pepper mixture. Season again if necessary.
Cover half side the other half side and remove the omelette from the pan and continue for the next one.
Tips
Amazing breakfast solution, especially for vegetarians, when served with different proteins and good fat!
