Baked Cod with Ratatouille

Ingredients / 2 port 4 x 90 g cod filé, middle piece 2 tbsp extra virgin olive oil 2 portions of ratatouille, stock | 2 dl tomato sauce, stock 2 tbsp freshly chopped parsley Celtic salt and freshly ground pepper |
Method
In a medium-sized baking tray, place the ratatouille and tomato sauce, and add the fish in the middle.
Drizzle the fish with the olive oil, cover the tray with a cling film, and bake in a preheated 100° C oven for approximately 20 – 25 minutes. Check in between to not overcook the fish.
Turn off the oven and leave it to rest for another 10 minutes.
Season the taste with salt and pepper, sprinkle the parsley and the lemon juice and serve at once!
