Baked Cod with Ratatouille

Ingredients / 2 port

4 x 90 g cod filé, middle piece

2 tbsp extra virgin olive oil

2 portions of ratatouille, stock



2 dl tomato sauce, stock

2 tbsp freshly chopped parsley

Celtic salt and freshly ground pepper


Method
  • In a medium-sized baking tray, place the ratatouille and tomato sauce, and add the fish in the middle.

  • Drizzle the fish with the olive oil, cover the tray with a cling film, and bake in a preheated 100° C oven for approximately 20 – 25 minutes. Check in between to not overcook the fish.

  • Turn off the oven and leave it to rest for another 10 minutes.

  • Season the taste with salt and pepper, sprinkle the parsley and the lemon juice and serve at once!


Tips
  • Generally, having stock in the fridge means easy and speedy cooking. This means a good organisation and respect for what you choose to prepare and eat, called lifestyle!

  • To keep some food stock, the secret is always to cook a little extra and know the week's program to split it in the weekdays by creating your daily food. It is straightforward to become a chef following the Right Foos Daily concept.
